Bel, a French company specialized in the production of cheese, asked Boccard to help its plant in South Dakota to increase the production of brine.
Brine is a delicate stage in the cheese production process. It consists of immersing the cheese in a salty water solution, its salt content will determine the salt content of the cheese. The preparation of the brine must be precise: depending on its degree of acidity, the cheese obtained will be hard or soft. Boccard’s expertise in dosing systems was paramount in this project.
The preparation line that we designed integrates preparation, storage, refrigeration, distribution and filtering systems. During the design phase, we simplify the line as much as possible to facilitate the integration of third-party equipment.
